Our chef and his gastronomy
Our Chef Mr Bruno ESTIVAL born in the Basque country, he arrived in Corrèze in the early 70's with his parents in Tulle. His parents then open the restaurant which will later be an institution in our prefecture "La Toque Blanche".
It is at the vocational high school René Cassin that he will obtain all his cooking diplomas, before leaving the department to enrich his experience in various restaurants of great renown (the Gray d'Albion, The Grand Palais and many others). South of France.
He will return in the early 80s to work with his parents and will resume the entire family business in 2000. For 30 years, he delighted our taste buds with a tasty, traditional cuisine and with respect for our local products.
It is now at Domaine des Monédières that he expresses all his talent and leadership skills. You will find in his new card all this experience and diversity that makes up his kitchen.
